Dark chocolate cupcakes filled with a red wine cherry filling and topped with rich chocolate frosting.

Ingredients

  • 2 cups raw sugar
  • 2 cups all-purpose flour
  • 3/4 cup dark cocoa powder
  • 2 large eggs
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 cup oil
  • 1 cup milk
  • 1 Tablespoon white vinegar
  • 1 cup strong brewed coffee

Instructions

  1. Preheat oven to 375 degrees.
  2. Mix milk and vinegar and let sit while you mix dry ingredients.
  3. Mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  4. Lightly beat eggs.
  5. Whisk coffee, oil, and eggs into soured milk.
  6. Mix into dry ingredients until well incorporated.
  7. Fill greased cupcake pans, paper liners, or silicone wrappers 3/4 full.
  8. Bake 18-20 minutes until toothpick comes out clean.
