When Cucumber Apricot Smoothies come to mind I think light fresh and summery. Along with that, this smoothie recipe leaves me feeling energized and hydrated for the rest of my day.
Cucumber Apricot Smoothie
- 1 small cucumber (appr. 4 inch kirby)
- 4 apricots
- 1/4 pineapple
- 1 stalk kale
- 1/2 cup fat free milk
We skipped the banana because I really wanted my husband to try it and bananas are one of the few things I have never been able to change his mind on. I was slightly worried the cucumber would be a bit strong but it worked. With the combination of fruit and cucumber you get a hint of cool cucumber but you don’t get hit in the face with it. I will probably add more apricot next time but you could still taste it. I just want it to be a more dominant flavor.
I might also add a banana if my husband isn’t drinking it because the banana holds it together better. I drank it as I got the kids going on schoolwork and over an hour it separated and isn’t as good that way.
Adding just one stalk of kale masked it enough that the kids didn’t know it was in there and E drank it this time. R of course had a sip and refused anymore but she ate a banana instead and that’s fine with me.
