I just kind of made this up. It is super yummy and very easy. Here’s how –
Meal #1 –
2 large onions, sliced lengthwise into narrow wedges
3 cloves garlic, chopped
1 bottle beer
15 sausages
Put the onions in the crockpot.
Add the sausages.
Pour beer on top.
I cooked this all night (8-10 hours) in the crockpot on high the other month for my husband’s work. The onions and beer were just to flavor the sausage but it turned into this delicious french onion soup! So, you could use less sausages and do the same thing. You have 2 meals – sausage sandwiches one night and french onion soup the next. You can also freeze it for another day. Just pull it out of the freezer the night before and thaw in the fridge. Heat with cheese and croutons on top for a quick and easy dinner.
Meal #2:
5 large onions, sliced into thin wedges, placed in crockpot
4 cloves garlic, chopped
1 bottle dark beer
1 – 32 oz. beef broth
Cook in crockpot on high 10-15 hours. (I did this overnight but you could cook partially and refrigerate then put back in the next morning.) Occasionally push onions down into liquid.
You can sprinkle shredded mozzarella on it before serving or slice thin pieces of mozzarella and put on top of each individual bowl (oven safe) of soup, then place in oven for 10-15 minutes. Mine got nice and brown.
