Slow Cooker Apple Glazed Pork Roast

  • 1 (2 – 4 lb) pork roast
  • 3 cloves garlic, minced
  • 1 medium onion, sliced
  • 6 apples – I like to use a baking apple but anything besides red/golden delicious works
  • 1/4 cup apple juice
  • 1/21 teaspoon cinnamon
  • 1 teaspoon ground ginger or 1 tablespoon freshly minced
  • 3 tablespoons brown sugar

Instructions

  1. Rub the roast with salt and pepper and place under the broiler ot brown and get rid of excess fat. Drain well – it actually works great to put in on an oven safe rack over a cookie sheet.
  2. Core and slice the apples – quarters or smaller. Place them in the bottom of the crockpot along with the onions and garlic.
  3. Place the roast on top of the apples, fat side up.
  4. Mix together brown sugar, apple juice, and ginger and pour over the pork roast.
  5. Slow cook on low – approximately 8 hours for a smaller roast and 10-12 hours  for a 4# roast.  If you need it done quicker put the crock pot on high to cut a few hours. A 3# roast usually takes about 5 hours on high for me.
