Cranberry and orange has got to be one of the best flavor combos out there, and cake? Well, cake is totally justifiable as breakfast every once in a while. But sometimes you just want something for breakfast or brunch that’s delicious with little effort.
These Cranberry Orange Muffins are just that – super easy and so tasty. You might have already noticed we have a thing about muffins. Just check out all these muffin recipes that are easy to whip up for a leisurely breakfast or breakfast-on-the-go. They can even be baked ahead and frozen with no problem.
You can use fresh or frozen cranberries, just make sure you gently fold in frozen cranberries so you still get those nice bites of tartness rather than obliterated cranberries so mixed in the muffin turns red. It also helps to keep that pretty red swirl that develops as they bake. Just a note that if you use fresh cranberries you won’t get the same swirl. Shall we get to baking now?

- Prep Time: 7 minutes
- Cook Time: 18 minutes
- Total Time: 25 minutes
- Yield: 12 muffins 1x
Ingredients
- 2 cups flour (unbleached/all-purpose)
- 3/4 cup sugar
- 1 TBS. baking powder
- 1/2 tsp. salt
- Juice and zest from 1 orange
- Approximately 3/4 cup milk*
- 1/4 cup oil
- 1 egg
- 1 cup cranberries (fresh or frozen)
Instructions
- Preheat oven to 400°F. Line cupcake tins with liners.
- Mix dry ingredients together then mix in orange zest.
- Mix wet ingredients in separate bowl then mix into dry ingredients just until incorporated. Don’t over-mix.
- Fold cranberries into batter.
- Fill muffin tins ¾ full and bake 18-20 minutes.
Notes
- Measure juice from 1 orange into a measuring cup and add milk until you have 1 cup liquid.
