Bet you thought I would have pictures of cookies piled everywhere. Sorry to disappoint at this time of year when we are all either baking up a storm or pretending we are. I haven’t started my holiday baking yet but soon…..when I have 5 minutes or 10. With 6 different types of cookies I would love to bake since I “make them every year”, the task is overwhelming.
It doesn’t have to be. Make your cookie baking a little easier this season, or next if it’s too late this year. Whenever you get a chance mix up a batch of cookie dough you want this year.
1. Roll them into 1 inch balls and freeze them on a tray for about an hour. Pop them into a freezer bag labelled with what is in them and the temp and time to bake them at and you have made your job a little easier.
2.You can also put a ball of dough into plastic wrap and work it into a 1 inch thick log. Wrap and Freeze. When you are ready to bake, just cut in 1/2 inch thick rounds and put on a baking sheet.
While you are at it make sure you bake 6 or 12 for now.
When you need an assortment of cookies just pull a few different types out of the freezer and bake them up for a gorgeous assorted plate that looks like you slaved for hours in the kitchen.
I like to cut the dough while it’s frozen and then let them thaw 15-20 minutes on the cookie sheet before baking.
