  • 1 pie crust dough
  • 3 cups fresh sweet cherries, pitted and mashed
  • 1/2 cup water
  • 1/8 cup sugar
  • 2 tablespoons cocoa nibs
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon cornstarch
  • 1 ounce unsweetened chocolate
  • 1 egg, beaten

Instructions

  1. Preheat oven to 375.
  2. Heat cherries, cocoa nibs, balsamic vinegar, and sugar until bubbling.
  3. Dissolve cornstarch in water and add to pan.
  4. Stir frequently until thick.
  5. Stir in unsweetened chocolate until melted.
  6. Roll and cut out pie dough into 3 inch rounds.
  7. Brush dough circles with beaten egg.
  8. Add a small spoonful of chocolate cherry filling to center of one dough round.
  9. Top with second dough round, crimp edges closed and cut slit in middle of pie top.
  10. Bake for 15-18 minutes, until golden on top. If you don’t brush top with egg it will not brown.)
