Day 2 of our 8 Pounds, 5 Meals project found me craving mashed potatoes. What would be better over mashed potatoes than a family favorite that is also incredibly easy? Chicken and Gravy made every one happy.
Homemade Chicken and Gravy has so few ingredients but is so rich in flavor you will hopefully NEVER pick up a gravy pack or jar again. Please, please, please! Cornstarch, rich chicken stock, chicken, salt and pepper. You all know I like to play with my recipes and switch them up. Not this one. Some recipes are best left simple and to the point. Even better, this is a great go to recipe for people who are gluten-free and/or dairy-free.
Your base for the chicken and gravy is mashed potatoes or bread. I prefer mashed potatoes but if you are low on time just grab the bread and be done. Make however many mashed potatoes you generally would for your family. If you aren’t sure how many to make, my rule is 1 medium potato per kid, 1 large/2 medium per adult, and throw in a few more just in case. It usually means I get leftover mashed potatoes the next day and who doesn’t love leftover mashed potatoes with a pool of melted butter, salt, and freshly ground pepper?
Some meals just aren’t beautiful. This one wasn’t and though I tried I just didn’t get a beautiful picture so, for something pinnable, here you go.

Ingredients
- 2 cups shredded chicken
- 4 cups stock
- 3 tablespoons cornstarch
- Salt and pepper to taste (start with 1/2 teaspoon salt and 1/4 teaspoon black pepper)
Instructions
- Whisk cornstarch into 2 cups of stock and heat over medium heat, constantly whisking until thick and bubbly.
- Whisk in remaining stock, chicken, and seasoning.
- Stir frequently until heated through and thick.
