Yesterday I didn’t plan ahead for lunch and someone was coming over so I needed something quick and easy. I started out by making brown rice with black eyed peas. Looking in the refrigerator I realized I was quite low on meat but had a pound of ground chicken. I crumbled it and threw it into the ActiFry. Once it was cooked through I added broccoli and BBQ sauce for an easy chicken and broccoli.
Ground chicken isn’t my favorite on its own. I definitely prefer it mixed into things and with bolder flavors added to it. I cooked it in the ActiFry but you could also cook it on the stove top. I love my ActiFry. All you do is throw it in, set the time, and walk away until it beeps. YES! I hate the mess frying up meat creates and I hate standing over the stove constantly turning it. ActiFry does the hard work for me. It cooks it and turns it so I have perfectly done meat in quick time – 10-15 minutes. This means I can actually sit down and visit for a bit or as I did yesterday, chop a fresh head of broccoli into florets. Once the meat was done I tossed the broccoli in, added about 2 tablespoons of BBQ sauce and set it for another 7 minutes.
I used Honey Chipotle BBQ sauce. It was a perfect blend of sweet and spice. Thankfully it wasn’t so spicy that the littles didn’t enjoy it. You can add more sauce if you want it to be saucy. I went quite light because sauce can be quite messy and with 5 kids eating I just didn’t want to deal with that mess.
Super easy and delicious you can use your favorite BBQ sauce in it. Even better, as long as you use a gluten free BBQ Sauce you don’t have to worry about anyone who has a gluten intolerance.
BBQ Chicken and Broccoli
- Prep Time: 10 minutes
- Cook Time: 15 minutes
- Total Time: 25 minutes

Ingredients
- 1 lb. ground chicken
- 1 large head broccoli, chopped into florets
- 1 medium onion, sliced thin
- 2 Tbsp.+ BBQ sauce (I prefer a sweet and spicy BBQ)
Instructions
- Crumble and cook ground chicken through.
- Add broccoli and onions.
- Cook until vegetables are tender crisp.
- Add sauce.
- Cook 5 more minutes.
