Ingredients

  • 10 peaches – peeled and sliced thin (You can use frozen peaches but your dessert will be a bit soupier)
  • 2 cups blueberries, washed, whole – fresh or frozen
  • 2 cups rolled oats
  • 1 cup flour
  • 1/4 cup Monk Fruit in the Raw (or skip if you really MUST but the tiny bit of sweet with 0 calories that it adds is worth it)
  • 1/2 cup butter
  • 1/4 teaspoon salt

Instructions

  1. Pre-heat oven to 375°F.
  2. Place peaches in baking dish – any size 9 x 9 x 3 or bigger works. The smaller dishes do need to be deeper to hold all the fruit.
  3. Layer blueberries on top.
  4. Mix together oats, flour, salt and monk fruit. Mix in butter until crumbly.
  5. Smooth over top of fruit.
  6. Bake for 45 minutes – 1 hour.
  7. Serve warm or cold.
