Chicken salad can be a simple classic lunch but the addition of blueberries in my summery chicken salad recipe makes it a fresh seasonal sandwich.
I love summer and the season of fruit. First we have strawberry season, then blueberry season, then peach season, and finally, apple season. This year I missed the very short strawberry season but I made blueberry picking happen.
We drove to DiMeo Blueberry Farm in Hammonton, New Jersey to meet up with a friend and pick some blueberries. The day was far from easy or ideal as I had several things to do and was headed out of town for a conference two days later. My husband thought I was a little nuts. I am. That being said, who can resist freshly picked blueberries?
DiMeo’s Farm isn’t very close to me but they have pick-your-own organic blueberries for only $2.00/pint. Even factoring in travel and the bridge that’s a really good deal for organic blueberries. The day was long but we walked away with 18 pints of blueberries and just a touch of red on our necks.
Since our day was so packed, dinner was the last thing I felt like dealing with. With so many blueberries in the house, I figured I needed to incorporate them in some way. I had slow cooked 1/2 a chicken breast the night before so we took the meat off the bone, chopped it up, and made a quick and easy blueberry chicken salad for dinner. I’ve been dreaming of it ever since. That reminds me, I need to go pull another chicken from the freezer so I can make some more. It’s such a perfect and easy summer lunch recipe.

Ingredients
- 1 3/4 packed cup cooked chopped chicken
- 1/2 cup fresh blueberries
- 1/2 cup diced celery
- 1/4 cup mayonnaise
- Pinch of salt
Instructions
- Mix all ingredients together.
- Serve in a sandwich or over salad greens.
Fruit in a chicken salad is so nice. Usually it is apple or grapes. Blueberries make it surprisingly special!
