Black Bean and Salsa Meatloaf

Ingredients

  • 1 pound ground meat of choice
  • 1 16 ounce can black beans
  • 1/2 cup salsa
  • 1 cup shredded cheddar or monterey jack

Instructions

  1. Preheat oven to 400 degrees.
  2. Rinse, drain, and mash beans.
  3. Mix well with burger.
  4. Mix in 1/4 cup salsa.
  5. Press into baking dish – 9×9 – 11×11
  6. Spread remaining salsa over top.
  7. Sprinkle cheese over top.
  8. Bake 40-45 minutes or until done.

Notes

Serves 2 adults and 3 kids.
