Okay, okay, okay, so I may not think there’s anything wrong with dessert for breakfast every once in a while. However, who needs dessert for breakfast when you can have this healthy breakfast that totally LOOKS like dessert?
I have been craving a banana split for over a year now. I know! Long time when I could just make one myself. The problem is, I know they are never as good as I imagine. They’re huge! Like, HUGE and I get sick every time I eat one because it’s just so much muchly.
Banana Split Pancakes start with homemade banana pancakes. I used 1/2 cup mashed banana in place of the egg in this homemade whole wheat pancake recipe. Then I added sliced strawberries, diced pineapple, sprinkled some roasted unsalted peanuts over top, drizzled on easy homemade chocolate syrup, and added a dollop of homemade whipped cream with NO sugar and just a drop of vanilla extract.

Ingredients
- Homemade Banana Pancakes (recipe in post)
- 3 sliced strawberries per pancake
- Diced fresh or canned pineapple -no measurement
- Peanuts – Approximately 2 tablespoons
- Chocolate Syrup
- Whipped Cream
Instructions
- Top freshly made pancakes with fruit, peanuts, chocolate syrup, and whipped cream.
- Serve.
