No matter what type schooling you do back to school can get a little hectic. New routines and schedules mean you can get easily thrown off. Some ways I have found to help eliminate the busy morning or evening stress are to PREPARE! Here are some ways I make morning smoother along with my favorite recipes.
Muffins and Breads
Before school starts or even after, make a double batch of muffins. Freeze them for easy breakfasts or lunch additions. Put in refrigerator to thaw the night before or microwave for 30 seconds.
- Chocolate Banana Muffins
- Carob Zucchini Muffins {Egg-Free}
- Pumpkin Cream Cheese Muffins
- Blueberry Corn Muffins {Gluten-Free}
- Scrumptious Pineapple Carrot Muffins
- Pumpkin Cornbread – just bake in wrappers for 15-20 minutes
Pre-make waffles and pancakes – heat in the oven, toaster or microwave.

recipe with half whole wheat flour in place of the white.
- Sue’s Oatmeal Blender Pancakes/Waffles
Oatmeal
Make baked oatmeal the night before or ahead of time and freeze and re-heat or make Slow-Cooker Oatmeal.
Eggs
- Dice and saute veggies the night before and you have loaded scrambled eggs in no time at all.
- Fry eggs with the lid on for over hard – done in 5 minutes or so.
- Hard boil eggs ahead of time then serve on toast.
- Make an egg casserole the night before and re-heat in the morning.
- Serve scrambled eggs in a pita

- Too Sweet to Be an Apple Scone – make ahead and warm
