Apple Cinnamon Muffins are a classic muffin favorite and this recipe is our go-to that is especially requested by my husband.

Muffins make an easy on-the-go or in a hurry breakfast so I like to have a few batches made and in the freezer for any given day. They’re super easy to pull out the night before and let thaw overnight (or warm up in the oven or microwave if you forget to pull them out the night before). I love using these reusable silicone baking wrappers for easier clean up and less paper waste. No need to grease the pan and the muffins pop out super easily.
Apple cinnamon muffins are a great recipe to have the kids practice their knife skills on and I like to have them work on prepping them while I work on something else in the kitchen. It’s especially handy to make them when you’re already using the oven for dinner because the kids can work alongside you in the kitchen and they can go in the oven while you eat dinner.
We use a basic muffin recipe for all our muffins and make just a few changes to each one depending what we are adding. Want a basic muffin recipe? Skip the added diced apples and cinnamon and use 1 teaspoon vanilla extract. They come out of the oven so moist and delicious it’s hard not to eat the whole batch right away. It’s okay if you all cheat and have 1 for dessert. There will still be enough for breakfast.

Ingredients
- 2 cups unbleached or all-purpose flour
- 3/4 cup white sugar
- 1 Tbs. baking powder
- 1 tsp. ground cinnamon
- 1/2 tsp. salt
- 1 cup milk
- 1 egg
- 1/4 cup oil
- 1 cup diced apples (or 1 medium-sized apple)
Instructions
Preheat oven to 400° Fahrenheit.
- Mix together flour, sugar, baking powder, cinnamon, and salt.
- In separate bowl, beat together milk and egg then add oil.
- Add liquid ingredients to dry and mix until well-incorporated.
- Fold in apples.
- Fill greased or lined muffin tins 2/3 full and bake 18-20 minutes, until toothpick comes out clean or top springs back when touched lightly.
