Acorn Squash and Apple Egg Bake

Ingredients

  • 6 large eggs
  • 1 cup mashed acorn squash (approx. 1/2 medium acorn squash)
  • 1 cup diced apple
  • 1 tablespoon butter
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger

Instructions

  1. Put baking dish in oven with 1 tablespoon butter while you preheat oven to 350 degrees.
  2. Mix cinnamon and ginger into squash puree.
  3. Blend eggs and squash together.
  4. Stir in diced apple.
  5. Bake 20 minutes.
  6. *Use baking dish that is 9×9 – 9×13. I use a 9×11 casserole dish I love.
