This week’s menu plan and ingredients aren’t proving too challenging for me yet, although we do have just over half the week left. However, my kids aren’t quite so thrilled with me suggesting black beans, well, every day. They also aren’t quite on board for this black bean dip recipe yet but they have 14 more tastes to see if they REALLY don’t like it. If not, more for me. It will also make a great party dip this summer – so quick and easy!
All you need is a few ingredients and something to mash/blend them up with. I am using my black bean dip as a dip for pretzels or vegetables, salad dressing, and in my homemade burritos.

- 1 cup black beans, cooked
- 1/4 cups plain yogurt
- 1 teaspoon dried parsley
- 1/2 teaspoon chili powder
