As a result of a contest for Eat Write Retreat and one of the sponsors, watermelon.org, which you definitely need to visit for more amazing watermelon recipes, I have been in a watermelon world for two weeks. I love watermelon so that’s all cool. I also now have about 50 billion watermelon recipes to share with you over the next month or so. Sweet and Spicy Watermelon Gazpacho Mary is the recipe that won my vote at first sip and subsequently won me best watermelon recipe.

Sweet and SPicy Watermelon Gazpacho Mary

The challenge was to assemble a watermelon recipe in 2-3 minutes. I can do a lot in 2-3 minutes. I actually made a watermelon mint crepe batter and a crepe in 3 minutes. Problem? It’s too tricky to ensure your pan heat is right and guarantee a 3 minute finish every time.  I made a Watermelon Feta Spring Roll…awesome but messy.

What next? I decided to skip the food and make a drink. Watermelon Cilantro Ginger Ale? Almost but not quite.  Watermelon Mint Coolers and Wine Spritzers? Great but need some tweaking. Watermelon Cupcakes? Longer than 3 minutes.

Sweet and Spicy Watermelon Gazpacho Mary

So here we are, on the brink of contest’s end and a friend suggested a Watermelon Gazpacho.  Meanwhile, I had Bloody Marys stuck in my mind. I took the two ideas and made them my own. Today I debut the Sweet and Spicy Watermelon Gazpacho Mary. And don’t say I didn’t warn you – spicy is in the name for a reason.

Sweet and Spicy Watermelon Gazpacho Mary

Ingredients

Scale
  • 4 cups diced watermelon
  • 1 cup diced tomatoes + 1 grape tomato, quartered for garnish
  • 1/2 cup diced cucumber
  • 2 tablespoons diced jalapeño, with seeds
  • 1 tablespoon diced red onion + few pieces for garnish
  • 1 tablespoon red wine vinegar
  • 1 tablespoon lime juice
  • 6 cilantro leaves + 1 sprig for garnish
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

 

Instructions

  1. Throw everything into the blender and puree until smooth.
  2. Fill glass 1/4 the way with crushed ice.
  3. Pour blended mixture over top.
  4. Garnish.

Notes

Note: I’m keeping this one dry but you could go a little more “Mary” and add something to yours.
