It’s not quite wordless Wednesday but I have a recipe for you and it’s mostly in picture form. I took enough pictures of the process I thought I would pull together a different kind of post for Slow Cooked Sage Chicken with Acorn Squash. Acorn squash? Who slow cooks chicken with acorn squash for their kids? The potatoes were gone and this acorn squash, not a favorite, was sitting on the counter for way too long. By the way, my daughter thought it WAS potatoes. Sure didn’t taste like potatoes to me.

ingredients for slow cooked sage chicken with acorn squash1 roasting chicken  3-6 pounds
(You’re not delusional. It isn’t pictured)
1 acorn squash, peeled and cubed
1 red onion, sliced thin
2 cloves garlic, diced
1/2 teaspoon kosher salt
1/4 teaspoon sage
1/4 teaspoon/3 grinds black pepper
1/4 cup water
1 Slow Cooker

  1. I just put this in the crockpot. I did it on low for an all day slow cook rather than high for 3:30, so hopefully that works just as well. Thanks for posting!

    1. That should be fine. It will potentially still be more than long enough but if your squash gets really soft you could also mash/puree it afterward. That was my intent but I got lazy.
