Do you struggle with what to eat for breakfast? Do you tend to snack, grab breakfast on the run, or eat unhealthy? I struggle with breakfast – for me, not the kids. It’s easy to pour a bowl of cereal or make oatmeal and let them grab some fruit. Problem is, I am not a cereal eater. If I don’t plan ahead, I tend to dive right into my day and just forget breakfast.

This is bad for several reasons. First, if I don’t eat breakfast I tend to snack on junk and eat horribly all day. Second, I get grumpy and easily aggravated. Do I even need to explain why this is not good for a homeschooling mom? Third, I tend to grab something on the run – high carb, sugary, and bad for the budget. I started a new routine to ensure I eat my breakfast – I plan ahead.

I started making Monday “oatmeal day”. I make enough for the kids and I plus two more people. Then I make up two ready to heat and eat bowls, complete with toppings. I use hempseed and/or pumpkin seeds and dried cranberries or raisins. Two breakfasts checked off! In the morning I just heat it, add a tablespoon of cream, and breakfast is ready.

On Sundays I chop some veggies for the week – veggies for soup, salads, etc. I also started chopping a small amount of scrambled egg veggies. In the morning, I throw a portion of diced onion, mushroom, broccoli, or whatever other veggies are easy to grab into the pan with a little butter. Saute until soft and scramble one egg with a spoon of sour cream or sprinkle of cheese. I go very heavy on the veggies, very light on the eggs.

When I plan ahead and have ingredients ready to go, I tend to make a much healthier breakfast and actually eat breakfast. My day (and my kids’) is much better when mama has had her breakfast. Plus there is a lot less stress for me trying to figure out what I am eating.
