Besides my absolute favorite chocolate and cherry ice cream sandwich recipe, what better combination is there than chocolate and peanut butter ice cream sandwiches? I love biting into a peanut butter cup. Rich chocolate and creamy peanut butter melt in my mouth and I feel the stress rolling right off my shoulders. For just a few minutes all I need to worry about is that sweet and slightly salty combination exploding in my mouth. Since I promised you a peanut butter cookie ice cream sandwich, what better combination could there be than chocolate and peanut butter?

Peanut Butter Cup Ice Cream Sandwiches are better bite sized because my favorite peanut butter cookie is crunchy. I made mine 1 inch in diameter. Pop one of these babies in your mouth and for just a few minutes your cares can melt away. Best of all, their bite sized quality means you don’t have to worry about that diet. Just one little bite and walk away, or try to walk away.

Since not every one is a chocolate fan I am making a few peanut butter and vanilla ice cream sandwiches too. Assembly is a bit tricky with these ice cream sandwiches because they are so little. The best trick I found was to put a small scoop of ice cream on a chilled cookie, then pop it into the freezer for 1-2 hours. Once they are hardened, squish a second cookie on top and serve immediately. I was too impatient and the chocolate sandwiches weren’t quite frozen enough for their photo shoot.

Bite Sized Peanut Butter Cup Ice Cream Sandwiches

Ingredients

Scale

1 cup creamy peanut butter
1 cup sugar
1 egg
1/2 teaspoon cream of tartar

Instructions

Pre-heat oven to 375.
Mix ingredients until fully incorporated.
Drop by rounded spoonful on cookie tray.
Press down gently with a fork.
Bake 7-9 minutes.
Make 54 1 inch cookies.
