These easy gluten-free Rolo Cookies take Nut-Thins but you could substitute for a rice cracker if you are alergic to tree nuts like I am. I bet these are fantastic with the NutThins though. Chocolate, caramel, and nuts are always a great combination.
With Rolo cookies made with Ritz Crackers such a big hit on Pinterest right now, I thought a gluten-free version of the Rolo cookie was needed. These cookies are super easy to make just like the original recipe. They’re perfect if you need a cookie for a last minute cookie exchange or want to bring an easy dessert to a holiday party. The gluten free version is slightly less salty, but no less sweet, AND just as addictive. I think I ate 5 in a row the afternoon I made them. I couldn’t stop grabbing one off the cookie tray!
Easy Gluten-Free Rolo Cookies
- One box of Blue Diamond Almond Nut Thins with Sea Salt
- One bag of Rolo chocolates unwrapped
- Parchment Paper
1. Preheat the oven to 350 degrees. Cover a cookie sheet with a piece of parchment paper. 2. Lay out your Nut Thins on the cookie sheet. I like to lay out 3 x 4 though you could fit more of these on the sheet. 3. Place an unwrapped Rolo on top of the Nut Thin. 4. Place the cookie sheet in the oven for 3 to 5 minutes to soften the Rolo. Take the cookie sheet out of the oven. 5. Place a second Nut Thin on top of the warm Rolo and press down firmly. The Rolo should spread out to the edge of the Nut Thin. 6. Allow the Rolo Cookies to cool completely before eating, if you can wait that long.
