So, I really don’t think you are dumb. I get different people who say “they can’t cook”. I beg to differ. I think most people could cook, at least basic cooking, if they learned the foundations of cooking. Not everyone can “figure it out on their own” or cook gourmet but that’s ok. We all have our own strengths and weaknesses.
That being said, you need a crock pot. You seriously need a crock pot. Every woman NEEDS a crock pot. If you don’t HAVE a crock pot, you need to GET a crock pot. No idea what to get? Here are a few I recommend –
While there are some cheaper, you will see I recommend you get a 6 qt. digital crock pot. Why? Well, a 6 qt. will actually hold a whole meal for you. A digital crock pot can be programmed for whatever times you need. Make sure it has a warm option so you can have it set to switch to warm so it doesn’t completely over cook.
Here are my recipes. I use a loose recipe. In other words, there are basic steps to follow but they can be adapted to your family’s needs.
1 whole chicken – 3-5lb.
1 medium onion
Onion soup mix (optional)
1-2 medium sized potatoes per person. I use 1 per kid, 2 per adult,and a few extra for leftovers.
3 garlic cloves (if you don’t use onion soup mix)
1 pinch salt (if you don’t use soup mix)
Sprinkle of pepper
carrots – I use baby carrots since it is hassle free – 4 per person, with a few extra
sometimes I cut celery into sticks and put that in too
2 cups water
Put your chicken into the crock pot. Add the vegetables and soup mix if you use it.
Add seasonings and liquid.
Cook on high for 5-8 hours. (It will generally be done after 5 hours but can go for 8 without mushy vegetables usually)
Switch to warm if you need it to sit longer.
All that talk of braising and browning got you saying “No way!”? I completely skip that step with roasting in the crock pot.
Put your 3-6 pound roast in the crock pot.
Add potatoes, celery, carrots, and onions as for Crock pot Chicken.
Add 3 cloves garlic (optional)
Do not add onion soup mix to this.
Sprinkle 1-2 Tablespoons flour over top the roast.
Add a pinch of salt and a few grinds of the pepper mill (or a pinch of ground pepper).
Cook on high 5-8 hours.
Switch to warm after that if you have a digital crock pot.
