This weekend we are celebrating cherries with Whole Foods Market. In case you missed yesterday’s recipe, check out these Chocolate Cherry Vanilla Ice Cream Sandwiches. Be prepared to drool on your computer screen. Today we’re going savory after an amazing canning demo with Marisa McClellan of Food in Jars. Marisa made a scrumptious sweet, savory, and tangy cherry chutney for us this evening and oh my wow!
A spoonful over soft sheep’s milk cheese and I was transported from a demo table to a romantic evening overlooking a river, where lights twinkle over gently moving water and birds coo softly in the trees, while a gentle breeze blows wisps of hair across my face.
If you don’t know Marisa and her amazing books, you are missing out. She takes the production out of canning and makes it easy. Would you like one jar or two? Did you know there is a magic number for safe canning? Many fruits have an acceptable Ph level but the magic Ph level to safely water bath can is 4.6. Under that? You’re golden. Over that? Add more acid or bring on the pressure canner.
Speaking of fruit, Whole Foods had cherries for $1.99 lb. yesterday only. If you missed it you still need to go buy some. They are the best cherries. Plumper and fruitier than any other cherry I have ever had – for real. I chose fruitier because meatier sounds weird when we’re talking fruit. Good fruit is so important for canning. It can make or break the best recipe.
I have found that home canned products taste so much better, and Marisa gave us the secret for that. It’s because everything is done by hand. I am going to say there’s a little more to the secret than that. It’s called a dose of love. Food is always better with love added into the mix. That’s almost always the secret ingredient to the best meals people ever eat.
