Lately we haven’t done too bad at this one. However, there are nights where I am exhausted and dinner is less than adequate. With that said, I have never been to Borders so much in ONE YEAR as I have been in the last month. THREE times!!! Really, I generally cannot afford Borders in my budget so I just don’t go. Why look at what I cannot have? That is the quickest lesson I learned in the life of “no extra money”.
I have gotten pretty good at it…not buying what isn’t in the budget. Seriously, a lifetime of hands on learning!!! Anyway, that’s the proverbial rabbit trail of sorts. I went to Borders….and after an unforgettable trip (you may have read my other blog post) came home with the best find ever. A real bona fide cookbook designed for making freezer meals – YUMMY freezer meals!!!
Don’t know what’s for dinner tonight? No time for breakfast?
Well, starting next week I will have recipes (that I actually have tried) and tips and tricks for making freezer space work for you on those crazy days (and evenings). Plus, I found that if I have a meal all ready to pop in the oven, defrosting in my fridge (which means will go bad soon if not used) I am ten times less likely to be tempted to “get dinner on the run”.
AND, an added bonus is taking advantage of great meat sales at the store – like last week’s .99# bone in chicken breast.
