I love finding ways to make meals that are budget friendly, healthy, and a family hit. If you have kids, or a pickier husband, you know this is not always the easiest job on the planet. One way to make the main entree more budget friendly is to go meatless or find ways to stretch it a little farther. Since we live on an incredibly tight budget but try to buy our meat grass fed and/or organic, I need to make our meat stretch as far as possible. My Black Bean and Salsa Meatloaf is a huge hit and a great way to get those fiber and protein packed beans into your family’s diet. Besides being healthy, black beans are a very inexpensive staple, especially when you cook them yourself.

Black Bean and Salsa Meatloaf

Black Bean and Salsa Meatloaf

Ingredients

Scale
  • 1 pound ground meat of choice
  • 1 16 ounce can black beans
  • 1/2 cup salsa
  • 1 cup shredded cheddar or monterey jack

Instructions

  1. Preheat oven to 400 degrees.
  2. Rinse, drain, and mash beans.
  3. Mix well with burger.
  4. Mix in 1/4 cup salsa.
  5. Press into baking dish – 9×9 – 11×11
  6. Spread remaining salsa over top.
  7. Sprinkle cheese over top.
  8. Bake 40-45 minutes or until done.

Notes

Serves 2 adults and 3 kids.

    1. Really? Have yet to resort to beans as a main substitute for beef, but thought I would research if anyone else has tried a version with black beans added. Looks like I will make this tonite. Great ideas hoping that the yumminess works out well.

    1. Goodness no! Thank you for catching that. When I switched my recipes to a different program it started doing nutritional calculations for whole recipes. I must have missed this one. I don’t usually include nutritional values. I ran it through a calculator and it is approximately 368 calories per serving if you do it as 4 servings with 93% lean meat. Personally I would make it 6 servings but I know many people eat more meat than I do. Cutting the cheese would make it healthier with 100 less calories per serving.

  1. What a great idea to add black beans in!! I can’t add in salsa due to an onion allergy in the home, but I will be adding some black beans in to ‘hold it all together’ mixed with my normal seasonings. Thanks for a great idea!

  2. thanks for posting! i was just hunting around to see if anyone had tried this before. i want to attempt it for the same reasons as you posted. STREEEEEETCH that budget!
