My kids ate ground up beans and had no clue. Okay, it isn’t quite that easy. We have no need to be gluten-free, but I love to have recipes “up my sleeve” for those days I am taking a meal or inviting some one over who is gluten-free. I made a gluten-free apple coffee cake, my kids ate it, and no one knew it was made with a blend that includes bean flour.
Life without flour could mean a sad and lonely existence without some of my favorite desserts. Coffee Cake for breakfast would be one of those. That is until I adapted a coffee cake recipe and made it gluten-free! I held my results as I waited for the results but I can now safely tell you we have success.
I was relieved that this gluten-free apple coffee cake held together but was nice and crumbly in my mouth just as a good coffee cake should be. I love the streusel and apple bites throughout this recipe. Apple and coffee cake go together like, well, like apple and pie. Oh, and look at that beautiful golden brown crust. It’s just as crusty and perfect as it should be.
Make this coffee cake for breakfast, make it for lunch, or even dessert. Gluten-free doesn’t have to be boring or bland. The best part? If you have no need for gluten-free, just use regular flour.
Amazingly Delicious Apple Coffee Cake {Gluten-free}
- Prep Time: 15 minutes
- Cook Time: 60 minutes
- Total Time: 1 hours 15 minutes
Ingredients
Cake:
- 2 cups Bob’s Red Mill gluten-free all purpose flour
- 3/4 cup sugar
- 1/4 cup butter, softened
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 tablespoon white vinegar
- 1 teaspoon vanilla extract
- 1 large egg
- 1 medium – 1 large tart apple, cored, peeled, and sliced thin
Streusel:
- 1/4 cup gluten-free all purpose flour
- 1/4 cup sugar
- 1/4 cup butter, chilled
- 1 teaspoon ground cinnamon
Instructions
- Preheat oven to 350 degrees.
- Grease 8 or 9 inch round cake pan.
Streusel:
- Mix together flour, sugar, and cinnamon.
- Add butter, cut into small cubes.
- Mix until crumbly, in large chunks.
Cake:
- Add vinegar to milk and set aside.
- In mixing bowl, mix together all dry ingredients.
- Add butter and mix.
- Add milk, egg, and vanilla.
- Mix until just incorporated. Will be quite runny.
- Pour 3/4 batter into the greased pan.
- Place the apple slices on top of the batter.
- Scatter 3/4 the streusel in small bits across the top of apple layer.
- Pour remaining batter across top of apple and streusel.
- Sprinkle remaining streusel over top.
- Bake 50 minutes to 1 hour, until a toothpick comes out clean.
- Serve warm.
