We’ve reached the end of our 8 week $29 grocery budget challenge. This week is a little different for us as I will be out of town for part of the week with no stove. That’s why you will see I am using every bit of ‘extra’ money for on the road.

From Walmart to Whole Foods, you CAN eat well on a tight budget!

I also bought as much portable fruit, veggies, and a few healthier snacking items to take with us. Since I already love shopping at Whole Foods and use every frugal tip I can there, this trip didn’t end up being too bad. Many people voice how expensive Whole Foods is and I get it. I do. However, if you go in with a plan and shop smart you can get everything you need, even on a tight budget. I feel like the same is true everywhere you go. If you compare quality you aren’t going to get off cheap anywhere. Make sure you check out all the ways to save at Whole Foods.

Meal Plan Week 8

Breakfast

  • Scrambled Eggs with swiss chard and sautéed onions
  • Pancake and egg sandiwches
  • Fruit Parfaits
  • Granola and fruit

Lunch

  • Spinach salad, Celery sticks and apple slices with peanut butter
  • Salad with black beans, corn, and salsa (frozen corn from last week)
  • Chicken tender tacos (homemade tortillas) and fresh veggies/salad
  • Pasta, chicken tender and veggie parmigiana, Romaine Salad  (Chicken Tender parmigiana – chicken tenders with sautéed spinach , sauce poured over, then Manchego shredded over top then baked)
  • Salad in a Jar
  • Peanut Butter and fluff or jelly sandwiches (an annual treat since I won’t be around. Now I have to grab a jar of fluff.), veggie sticks, fruit
